Palace Hotel Tokyo to Launch ESTERRE Restaurant With Chef Alain Ducasse

Palace Hotel Tokyo is collaborating with DUCASSE Paris, founded by Chef Alain Ducasse, to unveil a brand-new restaurant on its premises. It is slated to launch on November 1, 2019. Palace Hotel Tokyo managing director and general manager Masaru Watanabe says Chef Ducasse has a well-established understanding and appreciation for Japanese cuisine, along with undeniable success in opening destination restaurants.

The Japanese property’s signature French restaurant, Crown, will permanently close its doors on July 28 to be replaced by the new eatery.

“Crown play a pivotal role in the introduction of French cuisine to Tokyo when it first opened in 1964 as part of the original Palace Hotel,” Watanabe tells Luxury Travel Advisor. The restaurant was updated in 2012 as part of a property-wide renovation; however, Watanabe adds “There’s no more refining or elevating to be done with Crown now … and it’s now time to do something completely different.” Queue Alain Ducasse.
